Resources for developing camera based hardware applications

Hello friends.

I'm currently working on a project that involves interfacing a camera with an MCU. I've quickly found out that an MCU is not the best option for camera applications (especially for video streaming). As a result, I'm currently building the project using a raspberry pi 0. 

However, I'm looking for any resource (books, online courses etc) that I can use to learn how to design camera systems without relying on development boards. Please if you have any information, kindly share with me.
